Baked Chicken Fajitas

I can't believe I haven't shared this recipe yet! It's a staple in our house. We probably eat it twice a month, at least. I like them even better than tacos, and I'm sure they're healthier!

This recipe makes enough for Casey, Harper and myself. If you want more, please adjust it for your family!

2 Chicken Breasts
1 Green Pepper
1 Red Pepper
1 Onion
Fajita Seasoning (I use Epicure, it's got very little sodium).

Heat the oven to 350. Chop up the chicken and peppers to how you like them. I do nice small pieces of chicken and long slivers of peppers. Toss with as much fajita seasoning as you like. We use quite a bit, because we like it that way. Bake in a casserole dish until chicken is done, about 40 minutes.

See how easy that is? And there are no added oils!

I serve on tortillas with some cheese and salsa. Yummy!
