West Indian Chicken

I made this myself for the first time this week and I just had to share the recipe. It's my Step Mothers recipe, and it's one of my favourite meals ever. Harper actually ate some of it, to my shock and surprise! Now that I know how easy it is, I can't wait to make it again!

West Indian Chicken

Ingredients
4-6 Chicken Breasts
Soya Sauce
Garlic Powder
Thyme
3 TBSP Shortening
4 Cups Water
2 Cups White Vinegar
1/2 bottle of BBQ Sauce of choice (I used Kraft Original).
1/4 Cup Brown Sugar

Chop the chicken up into nice bite sized pieces. Toss them in a bowl and add several squirts of soya sauce. Toss your garlic powder and thyme in there and stir them around nicely. I know I didn't put an amount of either, but if you like garlic a lot, put a bunch, if you don't, put less. I'd say it's about 1-2 tsp of thyme. Add more if you like.

Melt your shortening in a frying pan. Fry your chicken until done. Add the rest of the ingredients, and simmer for 45-60 minutes, or until it reduces to a consistency that you like.

Serve with rice! Enjoy!
