Blueberry Crumble Muffins
I promised it a couple days ago, so here it is, possibly the best blueberry muffin recipe in the world. It's by far the best one I've ever tried.
Ingredients
1 1/2 Cup All Purpose Flour
1/2 Cup Sugar
1/4 Teaspoon Salt
2 Teaspoons Baking Powder
1/4 Cup Vegetable Oil
1 Egg
1/3 Cup Milk
1 Cup Blueberries
1/2 Cup Sugar
1/3 Cup All Purpose Flour
1/4 Cup Butter, Melted
1 Tablespoon Ground Cinnamon
Instructions
- Heat oven to 400 degrees.
- Grease muffin pan, or line with cupcake liners.
- Sift flour, sugar, salt and baking powder together in a small bowl.
- In your mixer, combine oil, egg and milk until well combined.
- Add dry ingredients, making sure to scrape sides. Mixture is thick.
- Fold in blueberries.
- Divide into muffin tin, fill to 2/3 full.
- In a separate bowl, combine last 4 ingredients, until it makes a nice crumble.
- Generously divide into muffin tins, use all the crumble.
- Bake for 20-25 mins, check with a toothpick.
- Cool on wire rack.

YUM! Blueberry is my favourite. I always get my mother-in-law to make me homemade blueberry pie at Christmas. It's the best. :)
