Cinnamon Muffins
Tried out a new recipe for Cinnamon Muffins. Have had it on my to do list all week. Finally got around to it today. Here it is!
Cinnamon Muffins (Yield 12 Muffins)
3/4 Cup Sugar
1 Large Egg
1 1/2 Cup Flour
2 Tsp. Baking Powder
1 Tsp. Cinnamon
1/4 Tsp. Salt
1/4 Tsp. Ground Nutmeg
1/4 Cup Vegetable Oil
3/4 Cup Milk
1 1/2 Tsp. Vanilla
Top
3 Tbsp. Sugar
1 Tsp. Cinnamon
Heat your Oven to 350 F.
Grease muffin tin.
Mix sugar and egg.
Mix flour, baking powder, cinnamon, salt, and nutmeg in a separate bowl.
Add dry ingredients to sugar/egg mix.
Scrape sides well!
Add milk, oil, and vanilla.
Pour the batter into the muffin tin.
Bake for 15-18 minutes, until a toothpick comes out clean.
Let cool in the pan for a couple minutes, then remove to a wire rack.
Mix remaining cinnamon and sugar, and sprinkle it on top while still warm.
Let cool completely.
Enjoy!
Just a note, this makes 12 muffins. They aren't huge either. For a larger muffin, you may want to double the recipe but still make 12 muffins. Just bake it longer.
